Confit Eggs with Lemon Pepper

  • 3 tbsplemon zest

  • 1 tbspsalt
  • 1 tbspcitric acid(optional)
  • 1 tbspblack peppercorns
  • 1 tbspgreen peppercorns
  • 1 tbspred peppercorns
  • 1 tbspgarlic flakes
  • 1 tbsponion powder
  • 1 tbspdried oregano
  • 1 tbspdried rosemary
  • 1 tbspdried thyme
  • 1 qtolive oil(170f-180f)

Instructions

  1. Heat olive oil to 170-180°F.
  2. Add egg yolks to the oil.
  3. Cook for 30-35 minutes.
