Chocolate Budino

  • 2 cupsheavy cream
  • whipped cream

  • 1/4 cupgranulated sugar
  • 1/4 teaspoonfine sea salt

  • 8 ouncessemisweet chocolate(chopped)

Instructions

  1. In a medium saucepan, combine the heavy cream, egg yolks, sugar, and salt over medium heat.
  2. Cook, stirring constantly, until the mixture thickens and coats the back of a spoon, about 5 to 7 minutes.
  3. Remove from heat and strain the custard through a fine-mesh sieve directly over the chopped chocolate.
  4. Let the mixture sit for a minute to melt the chocolate, then stir until smooth.
  5. Divide the budino among serving cups, such as espresso cups, and chill until set, at least 2 hours.
  6. Serve with a dollop of whipped cream on top.
